I’m back! I’m here! Happy Hanukkah, Merry Christmas, Happy New Year, and hello from Oregon! I realize it’s now been over a MONTH since my last post, but moving 3000 miles is no joke! Our house is finally coming together as we prepare for our Chrismukkah New Year’s Eve Housewarming party. While my recipe posting has been scarce, some of you may have noticed that I finally updated my About Me section, and don’t worry I’ve still been cooking almost daily so there are plenty of goodies to come!
The first week after we moved in, we didn’t have real plates or utensils yet so I had to get creative in the kitchen, and so I came up with what has got to be the easiest chicken recipe ever. Chicken breast is effectively smothered in mayo and spices of your choosing for a foolproof dinner that even the most notorious over-cooker can make. I’d recommend investing in a silicone brush if you don’t have one, but no other “special” items are needed, pretty sure I used a spoon that first day anyway (I’ve since made this dish several times).
2-4 boneless, skinless chicken breasts
1/4 cup mayonnaise
2 tsp seasoning blend of choice (like Penzey’s Sunny Spain)
Freshly cracked salt (to taste)
Freshly cracked pepper (to taste)
Pre-heat oven to 350*F. Cover a large baking sheet with a silicone baking mat or aluminum foil. Pat chicken breasts dry and remove any excess or large pieces of fat. Season the breasts with salt, pepper, and your chosen seasoning and place them on the baking sheet. Using your basting brush apply about 2 tsp of mayonnaise per breast, spreading thoroughly to create an even coating. Repeat this process again on the other side of each chicken breast.
Bake for about 25 minutes or until internal temperature reads 160*F. Serve immediately with veggies of choice.
