About Me

Hi there! My name is Beka (like Becca, but not). I’ve got two degrees, mountains of student loans, and something called Glycogen Storage Disease Type VII. I’m the brains and the belly behind Beka ‘N Eggs (formerly known as SlowCarbSnacktime). I started this blog as a way to stay motivated and share all the adventures of my slow carb turned paleo/Whole30 journey, but I never thought it would grow this much (or that I’d stick with it for so many years). I am not a trained chef, but I do love to eat and I especially love not feeling sick all the time. If you are ready for a lifestyle change or are battling a chronic illness, this might just be the place for you. I’m not here to be or teach you to become a professional chef. I’m here to help both of us become professional body owners. You only get one and it’s time to learn how to use it.

Some added facts about me:

  • In 2016, I earned my Master’s Degree in Health Administration with a concentration in Healthcare Ethics. Most of my graduate researched focused on diet/nutrition as a method of preventing and managing chronic illness.
  • I have an extensive history with chronic illness, both in my family and my own personal diagnoses including ADHD, IBS, interstitial cystitis, and Tarui disease.
  • I am 98% Ashkenazi Jew according to 23andMe, which explains some of the medical stuff I talked about in my Chronic Illness Update.

  1. Found your blog through reddit. Both my boyfriend and I have struggled with weight our entire lives, and we’re serious about making a change. Starting SCD next week (starting as I’m about to leave to a beach vacay tomorrow will not be good) and I’m looking forward to the journey so many people like yourself have triumphed.
