Hi there! My name is Beka (like Becca, but not). I’ve got two degrees, mountains of student loans, a pitbull named Franklin, and something called Glycogen Storage Disease Type VII – which basically means my muscles don’t know how to use sugar for energy.
I don’t have some insanely inspiring 200-pound weight loss story or a crazy experience of overcoming addiction, I’m just your average chronically ill first-gen Russian-American, but I have lots to bring to the no-added-sugar table. I’m the brains and the belly behind Beka ‘N Eggs (formerly known as SlowCarbSnacktime). I started this blog as a way to stay motivated and share all the adventures of my “food for health” journey, but I never thought it would grow this much (or that I’d stick with it for so many years).
In late 2016, I earned my Master’s Degree in Health Administration with a concentration in Healthcare Ethics. My graduate research was primarily focused on diet and nutrition in both the prevention and management of chronic illness. Most of this was before I had my GSDVII diagnosis, but I had already started figuring out that food was the main way I could manage my pain. Turns out, it was also helping my IBS, interstitial cystitis, and ADHD.
I call myself a Professional Body Owner now: someone who has put in the work to figure out how their system works best and owned it. If you or someone you love deals with a chronic illness, you probably know how quickly it can consume your life and become a main component of your identity. To me, now, it’s just that thing I have. I work hard to nourish and fuel this skin I’m in so it can perform at its best and do what it’s told.
Regardless of what your genes, your lifestyle, or the world may have thrown your way, your life unfolds in proportion to your courage. If you can’t get over the fear, do it scared.
