Hi there! My name is Beka (like Becca, but better). I’ve got two degrees, mountains of student loans, and something called Glycogen Storage Disease Type VII. I’m the brains and the belly behind Beka ‘N Eggs (formerly known as SlowCarbSnacktime). I started this blog as a way to stay motivated and share all the adventures of my slow carb turned paleo/Whole30 journey, but I never thought it would grow this much (or that I’d stick with it for so many years). I am not a professional chef, but I do love to eat and I especially love not feeling sick all the time.
