Sunshine Salad

Mmm, this is my new favorite salad creation. I had a friend over for dinner last night and made this… we literally fought over the last pieces. SO GOOD! (And so easy!)

1 large Heirloom tomato (red or yellow)
2-3 large Napa Cabbage leaves, you can cut off the rough end
15-20 oil-cured Beldi olives (I get these at Whole Foods and I am obsessed)
1-2 tsp. blue cheese crumbles (if you are otherwise strict with your diet, two bites of cheese won’t affect your progress)
1/2 red onion thinly sliced, layers separated
1-2 tsp. Olive Oil (or to taste)
1-2 tsp. Balsamic Vinegar (or to taste)

Combine all ingredients in a large, fun-colored bowl, adding the oil and vinegar last. Add salt and freshly cracked black pepper to taste. Mix gently with salad tongs. Eat it all before your friend does.
